As you can probably tell by the burn on my chest, I had an awesome time on my weekend away camping. It was full of pool time, good food, good friends and lots of drinks. Back to reality now.
I spent my last day off at the gym (I have a lot of chocolate, chips and margaritas to burn off!!), the grocery store and in my kitchen meal prepping for my set. That’s my typical “last day off” routine. I’m a little obsessive about my meal prep. Because I am out of the house for about 14 hours each shift, I have to plan and make a breakfast, lunch, dinner and snacks to last me through the day. I much prefer to take the time planning a few healthy meals to keep me on track during the week and not have to indulge in cafeteria goodies for days. Hospitals don’t exactly serve healthy or inexpensive food options! So, the coffee bar is as far as I delve into the cafeteria. Saves both my waistline and bank account from troubles.

I love this dress, but I didn't pick it up on my last trip. I'll have to give it another go because it looks cute with booties!!I tend to prepare meals early in the week and resort to buying food later on, when I'm too lazy/tired to prepare meals for work. I always have homemade granola on hand, which works with breakfast or for snacks. I'm all about whipping up quick and easy bean salads, as well as tossing nuts and seeds into a regular salad for added protein to get me through the day. Fruit with peanut butter or nutella is also super yummy. I recently discovered that snacking on apple, nutella and rice krispies is amazing.xoxo Jackiesomethingaboutthatthing.blogspot.com/
